Every year I make Christmas treats to take to friends and neighbors. This year instead of making a variety of chocolates & sweets I decided to keep it simpler and made some mini cupcakes. I have a bit of an ego going about these little cupcakes. I’ve made them a few times for Hubby’s work and he says people always ask “when is your wife bringing in her cupcakes again.” I love when people appreciate something I do :)
I did red velvet and cream cheese frosting cupcakes. And the little tree cupcakes are french vanilla with lemon custard filling. I’m a home made frosting kind of girl. I have a recipe card for this butter cream frosting, free to download here. This isn’t necessarily my favorite frosting but it is my favorite quick frosting.
For anyone who is wondering, I used a Wilton #12 tip to pip the swirls on my cupcakes.
Normally I wouldn’t do a green frosting, but I wanted these to look like mini Christmas trees. The stars are made from yellow candy melts. attached a pic below.
